The Producing Estate

Beyond the villas,
a world of its own

Beyond the gardens of the villas lies Hydra Bay’s vast private estate – a producing, living landscape where guests taste wine from our vineyard, olive oil from our groves, and eggs from our henhouse. Completely secure and accessible 24/7, it is a serene world of rustling olive trees, open pastures, and quiet abundance.

Wander freely through the olive groves, visit the peaceful deer park, ride one of three horses with an instructor, or walk the vineyard before a tasting in the private cellar. The estate offers an authentic, unhurried connection to Mediterranean life – entirely undisturbed by the outside world.

The Grounds

Nature, heritage, and open space

The Deer Park
Take a peaceful walk through the estate’s dedicated deer park, observing these graceful animals in their natural habitat.
Guided Horse Riding
Three horses reside on the estate. Guided riding sessions with an instructor can be arranged for all levels, including children – across open pastures and olive-shaded trails.
Olive Groves & Production
Wander through ancient, silver-leafed olive groves that produce the estate’s own olive oil and table olives. Seasonal participation in the traditional harvest is welcomed.
Vineyard & Cellar
The estate’s vineyard produces its own wine and tsipouro. Guests can walk the vines, join the seasonal harvest, and taste the estate’s production in a private cellar.
Estate-Grown Produce
The estate grows and produces its own flour (zea), olive oil, olives, honey, eggs, and seasonal vegetables. Much of what you taste during your stay comes directly from this land.
Mediterranean Gardens
Outstanding gardens of native Mediterranean planting, sculpted stone pathways, mature olive trees, flowering terraces, and shaded retreats that connect indoor and outdoor living.

From the Land to the Table

You taste what this land produces

The estate produces its own wine and tsipouro from the vineyard, olive oil and table olives from the groves, honey from the hives, eggs from the henhouse, flour from heritage zea grain, and seasonal vegetables from the kitchen gardens. Much of what guests eat and drink during their stay comes directly from this land.

Whether it’s a cellar tasting of our wine and tsipouro, a hands-on cooking class with a local chef using estate ingredients, or a long-table dinner under the olive trees – every meal here carries the character of the land itself.

While the farm and gardens are freely accessible at any time for walking and observation, our guided horse riding sessions, agricultural harvest participation, cooking classes, and specialized tastings must be reserved in advance.
